In this lesson, we explore the delightful world of yogurt, highlighting its creamy and tangy flavor, nutritional benefits, and various types made from different milks, including non-dairy options. The lesson emphasizes the role of good bacteria, or probiotics, in yogurt production, explaining how they transform milk into this tasty snack while also promoting digestive health. Additionally, it touches on the impact of sugar on yogurt’s sweetness and encourages enjoying yogurt with toppings like granola and fruit.
  1. What are some different types of milk that can be used to make yogurt?
  2. Why are probiotics important for our stomachs when we eat yogurt?
  3. How does adding sugar change the taste of yogurt?

Discovering the Delicious World of Yogurt

Hey there! Do you know what one of my favorite snacks is? It’s yogurt! Yogurt is creamy and tangy, which means it has a sour and strong taste. I think it’s super delicious! Sometimes, I enjoy yogurt for breakfast with some granola or fruit mixed in. Other times, it’s a perfect snack. Not only is it tasty, but it’s also really good for you!

What is Yogurt Made From?

Most yogurt is made from milk, usually cow’s milk, but there are other kinds too, like goat milk, sheep milk, and even buffalo milk yogurt! But the secret ingredient that makes yogurt thick, creamy, and tangy is something surprising: bacteria!

The Role of Bacteria in Yogurt

Bacteria are tiny living things that are too small to see with our eyes. You might have heard about bacteria when people talk about germs that can make you sick. But just like there are many different animals and plants, there are also many different types of bacteria. The bacteria used in yogurt are actually good for you!

How is Yogurt Made?

Before making yogurt, yogurt-makers get rid of any bad bacteria in the milk by heating it up, a process called pasteurization. This step is important for making sure the milk is safe. Once the bad bacteria are gone, it’s time to add the good bacteria, known as probiotics. These probiotics help keep our stomachs healthy and can be an extra boost if you have an upset stomach or are taking certain medicines.

The Magic of Probiotics

When probiotics are added to milk, they start to eat a type of sugar in the milk. As they eat, they turn it into lactic acid, which gives yogurt its creamy and tangy taste! There are different types of probiotics, and they can make yogurt taste a little different. Some yogurts have a strong flavor, while others are mild. The type of milk also affects the flavor, so cow’s milk yogurt tastes different from sheep’s milk yogurt.

Non-Dairy Yogurt Options

You might have seen yogurts made from non-dairy milks like soy milk, coconut milk, or almond milk. The same probiotics used in dairy milk are added to these non-dairy milks to make yogurt. And, of course, we can add different flavors like vanilla or strawberry to make yogurt even more delicious!

Sweetness in Yogurt

Yogurts can also taste different because of sugar. More sugar makes yogurt sweeter, and flavored yogurts usually have more sugar than plain ones. It’s okay to have a little sugar, but too much isn’t good for you.

All this talk about yogurt is making me hungry! How about a nice bowl of fresh, tangy yogurt with some granola and raisins on top? Thanks for joining us! • Have you ever tried yogurt before? What did it taste like, and did you have it with any toppings or flavors?
  • Yogurt is made using good bacteria. Can you think of other foods or drinks that might have good bacteria in them? Why do you think they are important for our bodies?
  • If you could create your own yogurt flavor, what would it be and why? Would you use any special ingredients or toppings?
  1. Yogurt Taste Test: Gather different types of yogurt, such as cow’s milk yogurt, goat milk yogurt, and a non-dairy option like almond milk yogurt. Have a taste test with your family or friends. As you taste each one, think about these questions:

    • How does each yogurt taste? Is it tangy, sweet, or creamy?
    • Which one is your favorite and why?
    • Can you guess which type of milk was used to make each yogurt?
  2. Yogurt Making Experiment: With the help of an adult, try making your own yogurt at home. You will need milk and a small amount of plain yogurt with live cultures. Follow these steps:

    • Heat the milk until it’s warm but not boiling.
    • Mix in a spoonful of plain yogurt.
    • Cover the mixture and keep it in a warm place for several hours or overnight.
    • Check to see if the milk has turned into yogurt. Taste it and see how it compares to store-bought yogurt.

Think about how the bacteria helped turn the milk into yogurt. What do you notice about the texture and taste?

  3. Yogurt Observation Journal: Keep a yogurt observation journal for a week. Each day, try a different type of yogurt or add different toppings like fruits, nuts, or honey. Write down:

    • What type of yogurt you tried and what toppings you added.
    • How the yogurt tasted with the toppings.
    • Any new flavors or textures you discovered.

At the end of the week, look back at your journal. What was your favorite combination? Did you learn anything new about yogurt?
